On mac it’s really hard to move notes up or down especially if the list is quite long. It would be good to have a menu item to move (not pin) a note to top or bottom. Making the note movement better is also be good if it possible.

Sounds like you want to hold the alt/option key while going to Note > Move to, it will then allow you to move a note directly to the beginning or end of the project.
