so I can’t archive a single note but a complete project only? Since I can’t create notes outside a “project” I need to use “projects” as folders, right? Even though the majority of notes is not part of any project. And I almost never want to archive a folder (project) but often notes. Is that somehow possible?

Yes, you can just use projects as folders. They don’t have to be literal projects at work or whatever.
You can only archive a project, but you can do various things to “hide” notes. Eg. you can turn them into footnotes, so they go to the bottom. You can double click the top of a note to collapse it (or use yellow dot).
If you have a bunch of notes you want to archive, you could consider setting up a second project with those notes, and archiving that.
