That does exist, at least on the Mac. Use Note > Collapse All.

I don’t think we have anything for that on iOS yet. Do you know @mekentosj?

On iOS we don’t support it at the moment, only on iPadOS through the same keyboard shortcut as on macOS (⌥⇧⌘ ↑ and ⌥⇧⌘ ↓)

Having said that, perhaps you have missed the table of content feature shown when you tap the title of the project? It gives you pretty much the same view as collapsing everything:
