Do you know how can I change or delete the default tags?

Not quite sure what you mean by change the tags. You can delete them simply like normal text. To add a new tag, just use the menus or the markdown (eg #tagname). There is no tag manager yet, but we hope to add that. For now, you just add and remove them as you need them.
These are present in the sample documents, at the moment only if you delete the last instance of a tag it will get removed from the auto-completion bar.
Ah! THANK YOU! At least there IS a way to correct all my spelling errors in tags. Now, is there a way you could just order the list alphabetically in the auto-correction bar?
I believe it is alphabetical, but that capital letters are shown first.
