⌘S is “Save” in basically every computer program (or just does nothing). It’s really hard to remember that it does anything else.
An option would be ⌘⇧X from Google Docs, but of course there are many other options.

I agree, if even it doesn’t do anything, we are trained to save with ⌘S, and having that mapped to strikethrough makes a lot of random strikethrough spots
I find this a good point, and it may even explain some unexpected strikethrough we see in notes. We will map strikethrough to a different shortcut. Thanks for pointing this out!
