Is there anyway I can set a range of dates to a single note? For example, the day I captured a task would be the start date and the day I plan to complete the task is the end date.

Yes, that should certainly work. On iOS, you can tap and hold the first date, and then start dragging. On Mac, you can tap the first date, then hold in SHIFT as you tap the last date.

I tried it on the Mac, but couldn’t make it work across months - ie start in one month and end in the next. Is there are way to manually enter dates rather than dragging across the calendar pop up?

Hovering with the mouse over the last day of the month for a while could switch the view to the following month ?
Apparently on iOS it is possible to start dragging from a month, keep dragging and tap (with another finger) the “next month” button, then move the dragging finger to the end date
