I would suggest to use tags for exactly this, you can add tags like #started or even #started(today) at the end of the checklist item (or #stuck, #ongoing, or #due(tomorrow), and use those to create smart overviews to always be on top of those. See Tags, People, Emoji's, Text Actions and Links
