By request from @speakingthesobertrut, I decided to create an iOS Shortcut that allows you to create multiple notes at a time. The shortcut asks for the project in which the notes will go to, as well as the start and end dates and it will create an individual note for each day. Before creating each note the sortcut will ask for a title and body, which should be optional.

This one does the same thing but it automatically sets the Note title to the day it is assigned.
