I too have issues with using colored fonts. For some reason the formatting tool bar disappears after using the tool. Is there a shortcut to make the toolbar reappear? I’m using an iPad with a Magic Keyboard. I’ve been clicking the keyboard icon to get the touch keyboard to appear and that brings the toolbar up.
Could you send a few screenshots or a screenrecording that shows what you describe?
One more question: Are you using the new Stage Manager feature? There are some issues with the bar in that, which we think are due to bugs in iPadOS. Hopefully Apple will fix those.
