What happened:
the cog button is missing and I cannot delete notes
It works on IPadOS14 but not iPhone using IOS 14

The actions under the gear menu, like deleting or sharing a note, on iPhone have been folded into the menu that shows when you tap the dot next to the title. This to compensate for the relatively large amount of vertical space the gear menu takes on such a small screen (we also had to add extra space already to allow for the date and title to not eat into each other).
An alternative is to simply drag the note to the left edge of the screen, the sidebar should open and you can drag it onto the trash can.
