What I did: I’m trying to delete a note and there is no cogwheel in any of my notes. I’m using the iOS app and can’t find a way to delete individual notes.

You have to click on the dot at the top left corner of the note once, and a menu will appear, then click Other Actions and you will find the Move to Trash command at the bottom.
As @maurizio.bortolotti says the actions formerly present in the gear menu on iPhone have been folded into the dot at the top left to save valuable vertical space on the small screen. An alternative to using this menu is to simply drag the note to the left edge of the screen, the sidebar should open and you can drag it onto the trash can.
