When a new note is created it should be assigned today’s date by default.

It would certainly be good if this option was at least something you could switch on in preferences…
We have debated this. One problem is that not everyone uses dates, or only applies them to some notes. We certainly couldn’t make it the default.
We could add a preference, but for now decided not to, because it is quite easy just to hit the keyboard shortcut for “Today” and you’re done.
We will think about it for future updates.
