I like that to create a new note, I can just click the (+) button.
I’d love the option to force touch/click on the new note (+) button and choose from a few (1-3?) notes that I’ve maybe marked or favorited as templates.

I would love something like this too! Great for reccuring events like meeting minutes
We indeed have ideas in this direction very similar to what you describe, not something to expect very soon but definitely on our wish list.
